Rather Vs Instead

Can somebody clarify when to use "rather than" and when to use "instead"

"Rather than" can sometimes be followed by all kinds of verb forms: eat, eating, to eat, ate, have eaten, etc. You will need to read a good book or Web explanation for details. But one expert has a wonderful "secret": just use INSTEAD OF + ING, and you will ALWAYS be correct!!!
