I am applying for a job and I want to say in a cover letter that " I would like to focus my skills in Account Management rather than Business Management." is that the correct way of saying it as rather than doesn't sound very professional.

It sounds quite professional, but I would use the preposition on in both places: before 'account' and before 'business'.
