Rather and Instead

Hi,

Could anyone please explain to me the difference between rather meaning on the contrary and instead, I can't figure out which one to use in sentences, sometimes it seems that they can be used interchangeably!... (btw is the use of "to" after explain a valid option in the sentence above)

Offhand, I would say that the meanings are indeed interchangeable, but they are often placed into different sentence structures: I like sushi rather than sashimi. I don't like sashimi; I like sushi instead. In fact, I don't think I could simply substitute one for the other in an identical sentence; can you?

In fact, I don't think I could simply substitute one for the other in an identical sentence; can you?
