Race-neutral(nondiscriminatory) expression

1. Could you check whether the following sentences are grammatically and semantically okay and also race-neutral expression?

Five suspects are held in custody. One is Caucasian, another is Afro-American, a third is Hispanic, a fourth is Middle Eastern, and the other is Asian.

2. Can I say 'white', 'black', and 'yellow' instead of 'Caucasian', 'Afro-American', and 'Asian' respectively? How about 'Chinese' or 'Mongolian' instead of 'Asian'? Can those words be widely used to refer to asian people such as Chinese, Japanese, or Korean people who are not Idian nor Middle Eastern people?
