what if i insert a "should", would it change anything?

"Yesterday, Jane insisted that we should order(ed) the toy."

"Yesterday, Jane insisted that we order the toy." 'order' = subjunctive (commonly used in AmE), 'should order' may be more common in BE.
In other words, we may not have ordered the toy yet, but will order it because Jane insisted on it yesterday.

If you said "Yesterday, Jane insisted that we ordered the toy." I would probably understand that we had forgo

In ordinary BrE:

— this might sound a little formal; but the present subjunctive does seem to be more common in BrE these days.
