In reference to Sentence I, could it be that it is just one of the interpretations you can draw and not necessarily the only one. To me the first sentence below sounds like a general statement sentence that ust indicates that he organized the company dinner this time that drew great responses.

I organized the company's annual dinner that was well received.

It could be, but to my eye it is still [that= the kind or thing specified as follows], a dinner that is differentiated from other dinners because (A) I organised it and (B) it was well received. Every time I read it, I have to stop and think what the writer means.

The second sentence is unambiguous.

In first sentence 'that' and in second sentence 'which' is misleading, and giving a hint that there were other dinners in the past and were not well received. If you want to say it in a general sense that you organised a dinner and it was well recevied then you could say;

I organized the company's annual dinner, and (it) was well received.
