Questions about stores' names

Could I ask two questions?

Why do stores' or restaurants' names often end in " 's "?

Is the " 's " a possessive word?

And I heard people say stores' or restaurants' names are sometimes shortened into a word ending with " 's ".

Does that mean this kind of rule can be applied to all stores and restaurants?

Thanks in advance.
