Question on Grammar

When I stopped to speak to Mary, she was picking some flowers in her garden.

In this sentence could you use "speaking" instead of "to speak"? If you cannot make the switch, then why must one use "to speak"?

Hi, No. I stopped to speak to Mary - I stopped in order to speak to Mary. ie shows purpose I stopped speaking to Mary - I ceased to converse with her.
