Question on ellipsis and another

Hi, can the ellipsis of this nature (that is - ellipted 'who are') happen anywhere in a sentence?

Women looking for men with good characters need not search any further.

They are women looking for men with good characters.

This woman (women?) group consists of women looking for men with good characters and women looking for men with good personalities..

Sorry but why is there what seems like a countable noun after the phrase 'a piece of'. I thought the phrase 'a piece of' is only used before an uncountable noun>

Give each student a piece of card and who them how to fold it ...
