Question about "their" and noun agreements....

Hi there. I'm confused about the use of the pronoun their. Which is correct:

Our students are driven to do well; their drive and energy are inspiring.

Our students are driven to do well; their drives and energies are inspiring.

Our students are driven to do well. their drive and energy is inspiring.

How about this one:

Students should bring their backpack with them.

Each student should bring their backpack with him or her.

Students should bring their backpacks with them.

ACH!! I am getting very confused with this stuff. I guess my question is...their is possessive. When is the noun being possessed singular, and when plural? ANY help is appreciated. Thanks!
