Question

I was watching a judge show the other day and a few people say, "numerous of time I..." or "numerous of times she..."
I think this is not correct but I am not sure why.

Any help would be appreciated.

"Numerous" is an adjective. You can say "numerous times", but not "numerous of times", just as you can't say "a good of show". If you want to use "of" you need to say "A number of times
