quarry has gone to ground?/ fling one?

The following sentences are from the novel Cut&Run.

1.I think I just got heartburn by osmosis,” he grumbled as he sat down opposite Zane. He didn’t trust New York eateries as far as he could fling one.
First, the speaker expresses a strong repulsion about eating at greasy spoon. And here I want to figure out what does "fling one" here mean?

2. Ty sighed and looked around at the empty street corners. “Looks like our quarry has gone to ground.” He growled in annoyance, beginning to walk slowly in the direction from which they’d come. “Did you happen to look at the report on that sheet the body was wrapped in?”

The second question is the quotation " “Looks like our quarry has gone to ground.”'. The context is about the two police officers cannot find any
specific pattern of those serial crimes. What's this mean? My guess is the suspect they are going to hunt stops hiding....or hiding somewhere..
