quality of (the) people

Hi,
The quality of people is very high.
The quality of the people is very high.
We are talking about the people at a certain company. I think either people/the people works, "the people" makes it more specific, but not a huge difference. Makes sense?

"It's an excellent school. The quality of professors is high".
It's clear we are talking about a specific set of people (professors at that school). Yet there are no modifiers and no definite article . . .?
