Schematic itself can be used as a noun. Other than that, sketch, drawing, schema, diagram are all nouns that have the quality of being schematic.

I think you'd have to use more than one word for that. I'm looking at "schematicality", like "The schematicality of the London Tube map can get you lost fast unless you couple it with an A–Z." But that is dreadfully cute, and I wouldn't use it in formal writing.

Definitely, but the noun you use will depend very strongly, I think, on the sentence you use it in. You might need a word related to 'design', 'chart', 'graph', 'configuration', 'diagram', ... ???
