Could you please suggest a word for the quality of one quantity being greater than another? Here is an example:
"An expression 'X > Y' denotes ... of X over Y."
There are "supremacy", "prevalence", and "dominance",
but I'm not sure that they may be used in a situation like this.
Additionally, if there is an appropriate word with the meaning indicated above, is there another word with the opposite meaning, that is the quality of being lower?

You haven't really given enough information about context, Victor. 'In a situation like this'? You have presented no situation at all.
"An expression 'X > Y' denotes ... of X over Y" is only a mathematical expression if anything, where none of those words would apply: it is usually read simply 'X is greater than Y' (so 'Y is less than X
It does seem like there should be a noun to denote the quality of being of greater value, but I can't seem to come up with one that's very satisfying. - Something analogous to "An expression 'X = Y' denotes equality between X and Y."
The only thing I can say is that I don't think 'should be' applies to lexes. In fact, it is one of the greatest problems of translation– one language has it, but the other language doesn't.
I'm perfectly aware that it may be read as "X is greater than Y". But I was just curious whether there is an appropriate noun to denote that (as Avangi correctly guessed).
As to clarification of the target context: the one I meant in the original post was
purely mathematical or economical or any other similar. If I understood you right,
"This indicates priority of quantity over quality."?
I'm sure you can hear sentences like that now and then but, to me, the above suggests that quantity and quality can have priorities which doesn't seem right.
