Punctuation after an appositive in frontal position

a. John, Bill, and Greg, each went his separate way/to the movies/bought one icecream etc

b. John, Bill, and Greg--each went his separate way/to the movies etc

a. Vanilla, chocolate, or banana, which would you choose?

b. Vanilla, chocolate, or banana--which would you choose?

Though a significant pause would follow the lists, the appositives, I'd still personally use commas in both.

How would you punctuate these? If not a or b, then how?
