Do you place an apostrophe in Veteran's Day? If not, then why?

The language is constantly evolving and, nowadays, people do not feel the need to adhere as strictly to some grammar rules as they once did. The use of the apostrophe is a prime example of this. If you were to put the apostrophe in though, it would be "Veterans' day" as I assume there is more than one veteran!?
