Why I won’t be coming in to work today is because I couldn't sleep well this night.

Is the the sentence above grammatical and a pseudo-cleft one?

No. It needs some changes. This would work:

The reason I won't be coming to work today is that I didn't sleep well last night.

But there's no need to make it so complicated. I would write this:

I won't be coming to work today because I didn't sleep well last night.
