provisions/supplies/materials?

Questions: When the first Chinese restaurants opened in Greece, it was very difficult to get fresh supplies/materials/provisions of Chinese vegetables.
I chose supplies, and the key did, too. But I can't figure out why materials or provisions is not suitable. Please explain to me!
