Pronoun 'one' & 'that'

1) Babies are the ones who are most strongly affected by the environment

2) People in my office work longer hours than those in other companies Q. Is it possible to use 'those' instead of 'ones' in the example (1) ?Q. Is it possible to use 'ones' instead of 'those' in the example (2) ? If so, what is the standard of using the pronouns 'one(ones)' or 'that(those)' ?
