As an imperative statement, we, while addressing the person, could simply say PROFESSOR:

eg Professor, can I ask you a question?

1. Am I correct? If yes,

2. Can we say this to other students?:

-In class, professor said...

without saying professor Peterson/Gacia/Spaulding etc.

You especially mention STANDARD ENGLISH; do you mean in dialects/regional languages in the UK and US people might leave determiners out who are native speakers of English?

I mean that, casually, some may use 'Professor' as a sort of nickname. It is a possibility.
