what do we call our uiversity professor when we dont want to use their name ?

Say Sir or Ma'am (pronounced mam).

I assume you are taling about university level.

I attend a class like that. If I want to make a comment or ask a question, I just raise my hand. Occasionally, I might say 'Excuse me'.

In a smaller class where there is always a lot of discussion, I would usually just wait for a lull and then say what I want to say.

In my culture, it's not always necessary to address people by a title. However, in your country and culture it may be necessary. You have to listen to how other people in the class do it.

Here in Iran when we are speaking in Farsi we call our professsors "ostaad" which means "a university professor" and it can be used individually. But when are speaking in English we call them with their last names.

I think what you and Rover_KE suggested is appropriate to be used instead of their names.
