either would be correct. I think I'd add the, as in "all the production (or all the production related). I don't think the "related" is necessary, but it isn't incorrect.

I didn't realize you were including this in a resume from your original question. In the U.S., you wouldn't use either "I will" or "I say" in a resume.

You would list the previous jobs you had and underneath each, have bulleted items that describe what your job duties or responsibilities were in each job. For example, for this job, you might have:

Production Assistant, XYZ Pro
