Are the following accurate definitions of the word 'process':

Both the noun and verb uses are common. I think your 1. and 2. are both nouns.

"Manner of action" sounds more like a procedure.

Many processes have different stages, but I don't think it's necessarily a requirement.
I'd say, for example, that the process of osmosis has only one stage.
