Prices went up.

Hello.

How would you interpret the following sentence (prices without any article) if you just heard/saw it?

Prices went up.

Would it suggest that some prices went up? Or generally products became more expensive?

You have not put it into any kind of context. As it stands, it means all of the prices in the habitable universe.
