Present simple and present continuous and simple past.

Dear everybody

I would like to ask about present simple and present continuous and simple past.

The conversation like this, which i saw from the movie

A: Hurry up, The shop is closing soon.

B: What is the shop you speak of?

I don't understand why they use present simple here (speak of).

I have confusion that I can use present continues or simple past instead.

1.What is the shop you speak of? (simple present)

2.What is the shop you are speaking of? (simple present continuous)

3.What was the shop you just speak of? (simple past)

Which is the most correct tense in these 3 sentences?

This is a similar answer to your question about "mean". When commenting on something said a few seconds ago it is usual to use the present tense, so here "What is the shop you speak of?" would be the usual tense, although this use of "speak of" is not common in ordinary modern conversation and sounds a bit like something out of an old book.
