I finish my work tomorrow at.. or I should say: I am finising my work tomorrow at (I want to say that my working hours are not permanent and they are changing constantly )

I would say "Tomorrow I get off at 6 p.m."

The following week, I work from 11 a.m. to 7 p.m.

I'd use the simple form, but there's nothing wrong with the continuous form either. Note the idiom "to get off work", not "finish".

[I get off / I'm getting off] work at 5 o'clock tomorrow.

This week [I work / I'm working] from ... to ..., and next week [I work / I'm working] from ... to
