1. Which is correct:


a) "I looked on both sides of the beach, and I realized that a strange man was staring at me."


or


a) "I looked at both sides of the beach, and I realized that a strange man was staring at me."



2. And which is correct:


a) "I could no longer look on my right, since a strange man was staring at me."


or


b) "I could no longer look at my right, since a strange man was staring at me."

Neither works. I'm not sure what you are trying to say. I don't see how looking in both directions was necessary to detect the staring stranger. Maybe "I looked up and down the beach." "Up and down" means "both directions along, one at a time".
