I would say 'don't interest me' but if you insist on using on of those ones I tend more to 'to', -- I think of 'to' as of 'in my opinion'.

There was a post with the same question, only it was with "difficult", and in that case the difference between both possibilities was more obvious. "to me" = "in my opinion" "for me" = "for my capacities" more or less.
