"I prefer listening to music" or "I prefer to listen to music" are the best alternatives. If you say 'I prefer to listen to the music' you are referring to very particular music that you mentioned already in your conversation.

First of all, a sentence is not to finish with an exclamation park, unless you mean to shout.
Secondly, "listen " is always followed by "to" when a object is present. Listen to me.

I don't agree. An exclamation mark can indicate other things, such as emphasis or surprise.

If you meant " Happy Birhtday!" or " Congratulations!" I agree with you. But they are not sentences. My statement was to illustrate the improper use of the exclamation mark. Generally speaking, using exclamation, along with BOLD types in emails or business correspondence are something advised not to do. That's my opinion.
