Potatoes, tobaccos.

Why not potatos, tobaccos or potatoes, tobaccoes or even potatos, tobaccoes.

In other words, is there a rule about spelling a plural like these or is it just arbitrary?

Yes, I've managed to do that but wondered if there is a rule.

I am a Child of the Universe and it is my right to spell the plural of tobacco "tobaccoes".

yes, and you are perfectly able to spell your entire sentence 'I am a chiyeld of thee yooniverse and it is mi rite to spel the ploorul of tobaco 'tobacos'. Doesn't make it advisable to do so.
