Potatoes

I'm afraid that this is a stupid enquiryEmotion: embarrassed

I know that I can say "boiled/ roasted/ fried potatoes"

Can I offer roasted potatoes by saying "Would you like some potatoes?" In other words, can I use just the word "potatoes" in order to refer to any kind of potatoes (i.e fried potatoes, roasted potatoes etc)

Yes. French fries are fried, not roasted. They're called "fries", not "roasts"!!!
