Possessives: " 's " with city/country names and personalities

1) Is it ok to use the " 's ", or just the " ' ", with those names ending in "s", such as Paris, United States, etc.? If yes, should it be pronounced /iz/ as well?


2) What about with names or surnames of famous people, such as Jesus and Aristoteles?
