Possessive Nouns

I am sometimes confused about hotel names. Why is it “Murphys Hotel” and not “Murphy’s Hotel”?
If Joe owns a ball, I say: “Joe’s ball” because it’s his.
But I have seen a number of hotels, some 4 star, without an apostrophe when, I feel, there should be one.
