Politeness

I have just realized I wrote too much in my previous request.

I was not able to understand (I consulted some dictionaries) whether to write to a professor I don't know: "I look forward to talking in person" is too familiar and impolite.

It is perfectly ok if it is feasible that this might happen; that you might see him or her at an interview for example. If you are just writing a letter asking for advice on something then it is implying that you are expecting them to telephone you with an answer or to meet you, which might be rather an imposition on them. If a written reply would be more likely, just put 'I look forward to hearing from you'.
