Since we are talking about more than one person (other people's), shouldn't we be talking about more than one piece of writing?

Other people's writing is the writing that other people do, no matter how many different examples of writing you're talking about.

Does it help to point out that 'writing' is, or can be, uncountable? You wouldn't talk about other people's knowledges, would you?

I can't see anything wrong with plural "writings" in the sense of literary output, as in "the writings of Gertrude Stein".

"I enjoy editing other people's stories/novels/writings" seems OK to me.

I didn't say it did. Note that in my reply to you, I used the word "effectively". In any case, the OP was clearly asking whether "writing or "writings" is correct.
