Hi

The Wikipedia entry on English Plural has a section on this

A very rough rule is that the singular tends to be used if the animal is hunted for sport: e.g. fish, deer

However, there are one or two words that have this form because they are genuinely irregular plurals: e.g. sheep

Best regards, Dave

That is true whether or not the animal has a plural form different from its singular. You say the woods are full of bear, for example, but you say the cage has three bears in it.
