Can anyone help with this?

'her appreciation of the plum-tinted boulevards'

or:

'wearing a plum-colored dress.'

Is it correct for these to have hyphens?

Yes, hyphens are correct.

You can find both those adjectives with or without hyphen, but I always prefer to hyphenate compound words.
