Can you replace 'Monday through Friday' with two forms of 'from Monday until Friday' and 'from Monday until Saturday'?

No. I would not make either of those replacements. The most you might do to modify the phrase is to add "from" before "Monday" to give "from Monday through Friday", but what you wrote first is still better.
