The line graph compares the amount of fish and some different kinds of meat have been consumed in a European country from 1979 to 2004.

It is obvious that fish provided the lowest consumption each year. Over the first 10 years, beef is dominated in consumption but chicken provided the highest over the period of 15 years later.

Between 1979 and 2004, chicken consumption went up dramatically from around 140 grams per person per week to 250 grams per person per week. By contrast, lamp eaten declined to approximately 60 grams per person per week. During the same period, the fish consumption had no change over the period shown, but the figure for the beef consumption fluctuated sharply over 25 years.

By 1979, beef is the primary consumable source which provided around 220 grams per person per week. The chicken consumption is lower than the figure for the lamp consumed, but it rapidly overtook the lamp just one year later. The fish was by far the least popular consumption, with figures 60 grams per person per week.

Your first sentence is not grammatical. This is a complete sentence:

The line graph compares the amount of fish and some different kinds of meat.

But next you put a verb phrase (have been consumed) . But this verb does not have a subject. The sentence does not have a proper clause structure.

have been consumed in a European country from 1979 to 2004.

Also, you did not tell the reader the names of the meats, so the description is not complete.

Here are some options for the first paragraph. There are many different ways to paraphrase the description in the instructions.

1. The line graph compares the amounts of fish, chicken, beef and lamb that residents of a country in Europe ate from 1979 to 2004. The units of measure are grams per person per week.

2. The line graph gives the quantities of fish, chicken, beef and lamb that were eaten weekly by people in a European country from 1979 to 2004. The units of measure are grams per person per week.

3. The line graph plots the number of grams per person of fish, plus three types of meat (chicken, beef and lamb) eaten weekly by people living in a European country from 1979 to 2004.
