Please help me understand this phrase.

Hi! everyone! I was going through some web pages regarding dogs health,I bumped into this phrase I don't know what that means,so here is the full paragraph and the colored one is entangling me-:The food might be OK if it de-frosts in your refrigerator for more than two days, but why risk it? Rather than de-frost a few days’ worth of meals for Ace, I de-frost one meal at a time. The longer food sits in the fridge, the more time bacteria has to grow. I’d rather stay on the safe side.
