Please, give me a hand !

Could you please, give me a hand for the following questions ?

1. The doctor is serving (or consulting ?) children at the pediatrics. (please, correct my mistakes in this sentence)

2. It's two p.m. now. (here is it indifferent to write: p.m. or P.M. ?)

3. The event coincided with the Easter holiday. (or: The event coincided with Easter holiday ?)

4. When someone says: "it's a quarter to eight . " Is it necessary to write in the end a.m. or p.m.?

e.g. "It's a quarter to eight a.m.

5. "He is the type (or kind) of person you can count on." (here are both forms correct ?)

6. "The couple started to date and years later they married." (Is there any mistake here, please ?)

7. "As Josephine loves to cook, she is always (doing, making or preparing ?) delicious lunch. (by the way is it correct to write lunches = plural form ?)
