Thank you for talking with (to??) me last week, Janurary 19th. It was nice talking with (to??) you.

As we talked about (it??) on January 19th, I think that having a bi-weekly meeting to discuss things of our common interest will be good.

I hope to set up a date and a place soon, so we can start to meet (meeting??) right away.

Thank you for being such a good friend.

I hope to hear from you soon.

For the same reason as above, I would use "with"; "to" is common as well.
