I think you need to decide how you want to use the form of "take" before you can just use the gerund(v-ing form) or the infinitive(in this case, the "full-" or to-infinitve) form. If you look at Alphecca Stars' examples, the first one is using a gerund as the subject: "Taking(what's not yours) is stealing." However, in this case, you can use both gerund and to-infinitive with no change in meaning: "To take(what's not yours) is stealing. So the rule for this is you can use both gerund and infinitive as a subject. In the last sentence, the rule is straightforward. After a preposition, you can only have a noun or gerund(including any determiners like "a', "the", or "some", etc.). Therefore, "for the taking" is correct. Now for sentences 2 and 3, well, these depend on the verbs before them so you basically have to learn the "verb patterns". In sentence 2, the pattern is "want + to-infinitive" at all times. It's the opposite to the verb, "enjoy", which can only use the gerund while the verb, "like", can use both to-infinitive AND gerund.
I like to watch TV on the weekends.

I like watching TV on the weekends.

I enjoy watching TV on the weekends.

I enjoy to watch TV on the weekends.

Now, for sentence number 3, I would agree with Alphecca Stars on this point that you can use the to-infinitive but the most common verb pattern for "help" is the bare infinitive, in other words, without the "to" as in:
I'll help you answer the question.
A good (Advanced) Learners Dictionary like Oxford or Cambridge would tell you the patterns for each of the verbs but remember, you have to look at the first verb and find its pattern(s).
