Can't we say "..diet yesterday at night .. " ?

You can, but it's additional information and would be separated with a comma. It's odd to use it that way in this type of announcement.

He died January 24, 1979, at night, in his own bed, surrounded by loved ones, with a view of the mooonlit ocean.
