Please check my essay. In this essay, I'm a little confused about when to use fish as a countable noun and when to use it as an uncountable noun. I know that when fish is considered an animal, it can be counted, but when it is considered meat, it can't be counted. So I don't know at which stage a fish becomes meat. Emotion: smile)

The schematic diagram depicts how smoked fish is produced.

Overall, to be delivered to fish stores for public consumption, fresh fish has to undergo a freezing/defrosting stage and several cleaning ones before being smoked and stored in the cold temperature.

In detail, having been caught from the sea, fish are stored on the fishing ship, waiting to be transported to the port. Once on the land, fish are frozen and then thawed. Following this is the cleaning stage when frozen fish is washed in impurity-free water. Next, it is cut open and then immersed in salt water to ensure that it is completely clean.

It is not until this stage that fish is smoked – it is put on a large pot supported by three legs. After that, it is frozen one more time before being ready for cold storage in the production site. Finally, fish is delivered to fish stores to cater for the public.
