Claire is the most popular girl in school. Everyone likes here.

How is that only one person?

No. It's A unless you consider the referent of "everyone in an empty room", in which case none of the answers will do because there is no referent. I don't think you can answer the question accurately without seeing everyone used in a particular sentence.

I have a question.

My friends are Mickey and Sally.

Sally and Mickey are my friends.

Correct me if I'm wrong but isn't the subject of these sentences, Mickey and Sally?

The subject of the first sentence is 'My friends'. The subject of the 2nd sentence is 'Sally and Mickey'. Then comes the linking verb in each sentence, and after that comes the subject complement.
