Which sentence is correct:

1. As sweeteners, there is very little ~~small~~ difference between honey and sucrose, althought the former does contain minimal quantities of vitamins, minerals, and amino acids.

2. As a sweetener, there is very little ~~small~~ difference between honey and sucrose, althought the former does contain minimal quantities of vitamins, minerals, and amino acids.

Both are acceptable. Often, no difference is intended.

#1 perhaps suggests that both things are sweeteners.

#2 perhaps suggests that both things can be used as a sweetener, thus implyihg more that they have other uses.

I need to enlighten (you) on this. - This is what you say if you need to give new knowledge about this to someone else. But I don't think you meant this. You are not trying to inform someone else. You don't want to give new knowledge.
