Playing this or that

Hello,

I know we usually say: he is playing thief (or whatever). But how about many people? Suppose I want to say: Those people looked so scary they might have played soldiers.

Must it be 'played soldier' or 'played soldiers'? Is it singular or plural?

Is it always the case? He played cop. They played cops ... and so on? Are there exceptions?

Yes, the plural is always more consistent, so speakers usually choose it.
