Hi,
"She said she could tell that he was being nice to try to convince her that he and Cindy had some great love story. He said maybe it was all just in his head, but the best love stories play out in your head, where everyone always said the right thing and ended up happily ever after."

What does 'play out in your head' mean here?

What is the difference in meaning between 'the story is just in your head' and 'the story plays out in your head'?

Yes, it more or less means happen, but with play out you get a bit more descriptive. It feels as if you are playing the film in your head.
